Chocolate Cake
This cake has quickly become a favorite in our house. Pair it with the chocolate buttercream icing… it is a chocolate lovers dream!
Chocolate Cake
Ingredients
- 2 cups all purpose flour
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1/2 teaspoon salt
- 1/2 pound (2 sticks) of butter
- 1/4 cup natural unsweetened cocoa powder
- 1 cup coke (not diet)
- 1 teaspoon baking soda
- 1/2 cup buttermilk, room temperature
- 2 large eggs, room temperature, lightly beaten
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350.
- If using cake pans **smear thin layer of butter in cake pans then add flour and tap around to make sure every part of pan is covered. Remove excess flour. This is a very important step. With homemade cakes nonstick spray does not cut it. Trust me**
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, and salt.
- In a small saucepan, bring the butter, cocoa, and coke to a boil over medium-high heat, stirring until smooth. Pour into flour mixture and whisk until smooth.
- In a small bowl, dissolve baking soda in the buttermilk. Pour into flour mixture and whisk until smooth. (this will look extremely weird for about 30 seconds, then it will mix right in.)
- Whisk in the eggs and vanilla.
- Pour the batter into the prepared pans and bake until a knife inserted in the center comes out clean. (probably around 25 minutes)
- Cool pans on a wire rack.
- Once cooled, assemble together with homemade chocolate buttercream icing. Recipe found here.
