Potato Soup
The love you put into making this soup will most definitely be felt by your family! My kids really enjoy this meal!
Potato Soup
Ingredients
- 6 strips of bacon (or more if you like extra bacon)
- 3 Tablespoons butter
- 1 medium yellow onion; chopped
- 3 large garlic cloves; minced (or use pre-minced garlic)
- 1/3 cup All Purpose Flour
- 2 1/2 pounds potatoes (I use red potatoes); peeled and chopped
- 4 cups chicken broth
- 2 cups milk
- 2/3 cups heavy whipping cream
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1/4-1/2 teaspoons chili powder
- Sour cream/shredded cheese for topping if desired
Directions
- Cook bacon ( I like to cook my bacon in the oven)
- Add 1-2 Tablespoons of bacon grease to pot (I like to use a dutch oven but any large pot will be fine.)
- Add butter and onions to bacon grease and cook for 3-5 minutes, stirring occasionally.
- Add garlic. Cook about 30 seconds.
- Sprinkle flour in and whisk until smooth.
- Add potatoes, chicken broth, milk, heavy cream, salt, pepper, and chili powder. Stir well.
- Cook until potatoes are tender. (usually about 40 minutes)
- Use an immersion blender to make the soup as smooth as you would like. (I like to leave a few potatoes intact.)
- Simmer for about 10 minutes.
- Serve with chopped bacon, cheese, and sour cream on top.
